Undeclared food allergen recalls are among the most frequent, and most damaging recall drivers in the food industry. Recalls are frequently driven by unintended cross-contact of food products with allergens, stemming from insufficient or inadequate controls.
Different countries have established different lists of priority allergens, based on global and regional research. The FDA has prioritized the Big 9 (milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame) as allergens of highest concern. Health Canada and the European Union Food Information Council (FIC) also include other substances as priority allergens, such as mustard.
